Ingredients
- Chicken (1 lb, cooked and shredded)
- Hass Avocado (2, peeled, pitted, and mashed)
- Mayonnaise (2-3 tbsp, we subbed sour cream)
- Lime Juice (1 tbsp plus 1 tsp)
- Red Bell Pepper (1/2 pepper, finely diced)
- White Onion (3 tbsp, finely chopped)
- Cilantro (3 tbso, finely chopped)
- Jalapeno Pepper (1/2 pepper, finely chopped)
- Garlic (2 tsp, finely minced)
- Salt and Black Pepper
Directions
- In a medium bowl, mix the mashed avocado, mayonnaise, and line juice.
- Mix in the chicken, bell pepper, onion, cilantro, jalapeno, and garlic.
- Season with salt and pepper to taste.
- Cover and refrigerate until ready to eat.
